This bread is packed with nutrition and makes a great heart healthy snack. It tastes great, you’ll never guess it has no oil, no butter, and no added sugar.
Ingredients
- 3/4 Cup Splenda
- 3/4 Cup Flaxseed Meal
- 5 very ripe bananas, peeled and mashed
- 1/4 cup skim milk
- 1/4 cup Egg Beaters or egg whites
- 1/4 cup low fat sour cream
- 2 cups stone ground whole wheat flour
- 2 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 tsp ginger
- 1 tsp nutmeg
- 1/2 cup raisins or other dried fruit (optional)
- 1/2 cup chopped pecans or other nut (optional)
Directions
- Preheat oven to 350 degrees.
- Spray a 9′ x 5′ loaf pan with cooking spray.
- Mix together Splenda, flaxseed meal, bananas, milk, sour cream, egg whites, raisin, and nuts until well blended.
- In a different bowl mix together flour, salt, baking soda, and spices.
- Mix the two bowls together until the mixture is evenly moist, do not overmix.
- Spoon into your pan and place in oven for 45-75 minutes, cooking times will vary, use a toothpick to test for doneness.
